A Birthday Cake fit for a… French Teacher?

Teachers teach 188 days in a school year, investing their time, energy, and passion into everything they do. How many times do you see them getting rewarded? They never ask, and they are very humble in their works. There is one day I feel every teacher should be recognized, to say, “the work you do is good, and deserves to be rewarded”, and that day would be their birthday. Mme. Casey (my former French teacher) was my teacher for two years in a row (grades 7&8). In grade 7, her birthday cake was simple, as I got notice the day before (see picture below). However, this year, it was a perfect opportunity to make a cake anyone would appreciate on his/her birthday, so I got to work.

I decided the cake would be two Tiers. To please everyone, I made one tier Red Velvet and one tier Chocolate. That pleased most of the crowd! Baking this cake took a lot of batter, but the result was totally worth it. Once the cake was baked, it was extremely heavy! The final cake weighed close to 30 lbs! That’s a lot if cake! I had to use supports, so the weight on the top layer wouldn’t crush the bottom (see picture below).

Now to the daunting task if icing it! Her favourite colour is pink, and I decided to go ombré on this one. At the bottom, the pink is dark, but it gets lighter as it goes up. The top contained 27 Rosettes, with borders on all sides. To add some dimension, days earlier I created some 3D Abstract Fondant shapes to have cascading down the front. I finished with a custom flag saying “Happy Birthday Mme. Casey”.

The cake was a HUGE success! After those countless hours, it was well worth it! This birthday cake was definitely fit for a French teacher!
